The idea of just 2 players slogging through the game without heroes/henchmen (when did we start generally calling them "mercs"?) has come up before.
In short, it doesn't work. You can get through the newbie areas that way, but when you reach the "real game," you will either struggle to stay alive or will simply not put out enough damage to kill mobs that are handily keeping themselves alive while they laugh at you and your buddy.
Accept that the game was designed around full party play. As I said in one of those threads, your heroes are an extension of yourself; you can load skills on them that you can't carry. Finding the synergies between yourself and your party members (players/heroes) is the key and the fun of successfully playing Guild Wars.
That said, what you and your friend pick really won't matter, since you can fill out the shortcomings with heroes. As long as you don't both go for spirit-spamming ritualists who want to run the same bar, you should be fine.
Otherwise, some complementary build/profession ideas were posted in the threads I linked above. Give them a skim.

If you don't want to really depend on merchs/heroes/henchmen you won't get far in this game. But one playing assassin or warrior and the other playing a splinter weapon ritualist or a mark of pain necro they'd work pretty well together.

I don't think it will be possible to even complete one campaign with only 2 players in the party. But if you wanna give it a try, I would suggest to go warrior and ritualist. the warrior can tank and deal nice damage, while the rit can prot, support and deal nice damage too. But again, you prolly will get stuck and have to depend on heroes/henchman later on in the game, but even then, those two professions have very good synergy. Sin would also be an option, though they are a better tank, they lack damageoutput imo.

Star Jewel said it best, and the others reinforced the idea nicely, that it's pretty much impossible to duo the entire game. Though certain high lv'ed areas can be duo'd, they require very specific build types from only a few proffesions, and even those only work for very certain areas.
However, I used to duo a lot with my brother, and it really does enhance the overall game experience, it was probably the most enjoyable time I had playing Guild Wars. We were both playing on Warriors, which posed a few issues in the 4-6man areas, which made them all the more enjoyable.
Playing the same professions can be a lot of fun, because you can learn tacics and diferent build types off each other. It can also be fun to have one of you two choose a healing profession while the other tanks. That way you rely on each other more so then if you both choose dps.
You really can't go wrong though, since like the people before me said, you can just have the heroes fill in the gaps. But choosing the same professions or two that heavily rely on each other would probably be funner IMO.
